Brooks Headley's vegetarian burger shop is one of the best restaurants in New York, period. Not best vegetarian restaurant — best restaurant. The space on East 9th Street is tiny and the menu changes constantly, but the namesake burger and the rotating salads are proof that constraints breed creativity. The line moves fast. The food is cheap. There is no catch.
