A Hill Country distillery making sotol — the desert spirit of west Texas — out of an old World War II hangar in Driftwood. The tasting room sits on a working ranch, the spirits are all distilled on-site from wild-harvested sotol, and the cocktail program is built around showcasing what most people have never tried. Texas-distinctive in a way bourbon can't be.
