Matt Bolus cooks refined Southern food in a sleek Gulch space that manages to feel both special-occasion and neighborhood regular. The menu moves with the seasons, the charcuterie program is house-made and excellent, and the burger — ground from dry-aged trim — is the best fine-dining burger in the city. The wine and cocktail programs are equally thoughtful.

The place has been here since 1947, the neighborhood has changed around it a dozen times, and the sandwich hasn't budged. Some things don't need improving.
