Sam Marvin's Tivoli Village restaurant takes meat seriously enough to age and butcher in-house, and the menu reads accordingly — cuts you don't usually see on menus, prepared simply, priced fairly for the quality. The Henderson location is worth the drive from anywhere in town.

Order something off-menu — the butcher specials change daily and they're where the kitchen has the most fun. The hanger steak is a perennial.
