José Andrés's wood-fire steakhouse at the Sahara is the most theatrical meat-eating experience in Vegas. The whole suckling pig is carved tableside with a plate (yes, a plate); the cotton candy foie gras is exactly as ridiculous as it sounds; and the menu is built to be eaten in waves over three hours. Come hungry, come patient, come ready to spend.
