Hopleaf

Chicago, Illinois

Photo: Steve V

A Belgian beer bar in Andersonville with one of the most thoughtful tap lists in the Midwest. The frites with aioli are famous, the mussels are excellent, and the beer selection — heavy on Belgian ales, farmhouse styles, and sours — is curated by someone who clearly loves what they do. It's warm, it's neighborhood-y, and it's exactly the bar Chicago deserves.

Insider tip

The CB&J — cashew butter and cherry preserves on a pretzel roll with Stilton. It sounds insane. It's perfect. Pair it with a Belgian dubbel.

Alinea

Grant Achatz's three-Michelin-star temple of molecular gastronomy is still the most ambitious restaurant in America. Every course is a provocation — edible balloons, desserts painted directly on the table, flavors you didn't know existed. It's not dinner. It's a performance that happens to involve food, and it will rearrange your understanding of what a restaurant can be.

Joe's Seafood, Prime Steak & Stone Crab

Not the flashiest name, not the trendiest address, but the stone crab claws flown in from Miami are the real deal and the prime rib is as good as any steakhouse charging twice the price. The dining room has that old-money Chicago energy — white tablecloths, professional service, martinis that arrive cold and correct. A power-lunch institution that earns its reputation nightly.

The Robey

A boutique hotel built into the iconic Coyote Building at the six corners of Wicker Park. The art deco bones are stunning, the rooms are compact but clever, and the rooftop bar — Cabana Club in summer, Up Room year-round — delivers one of the best skyline views in the city. You're steps from the best eating and drinking in Chicago.

DrinkRiNo · Denver, Colorado

Death & Co Denver

The Denver outpost of New York's most influential cocktail bar — a sister to the original on East 6th — set in a corner of the Ramble Hotel in RiNo. The room is dark in the way Death & Co rooms always are, the cocktails cost what cocktails should cost when this is what you're getting, and the program rotates seasonal menus that make most other bars feel like they're not paying attention.

DrinkDowntown · Las Vegas, Nevada

Atomic Liquors

Las Vegas's oldest freestanding bar, open since 1952. The neon outside has been there since the era when patrons would gather on the roof to watch atomic-bomb tests in the desert (hence the name). It's been carefully restored without losing its soul — warm wood, old bottles, real regulars — and it's the closest thing Vegas has to a museum that also pours bourbon.
